Información sobre este vino:
Il Caberlot «Podere Il Carnasciale» is a red wine from the Podere Il Carnasciale winery, a true wine gem nestled in the hills between the Apennines of Toledo and the mountains of Chianti Classico, in Mercatale Valdarno, Province of Arezzo, Tuscany. This wine is made using grapes from the Caberlot variety, a vine that is believed to be a natural cross between Cabernet Franc and Merlot, discovered in the 1960s in the vineyards of the Euganean Hills. The winery produces approximately 3,000 bottles of this wine each year, mainly in magnum format, since the first harvest in 1988.
The vinification of Il Caberlot is meticulous and reflects the winery’s commitment to quality. After fermentation in stainless steel, the wine is aged for 22 months in French oak barrels from Burgundy, with a proportion of new barrels ranging from 50% to 60%. It is then bottled unfiltered and left to mature in the bottle for 16 months before being released to the market. This extended aging process in both barrel and bottle gives the wine exceptional complexity and elegance—qualities that set it apart in the Toledo wine scene.
In the glass, Il Caberlot shows an intense red color with violet reflections, a visual invitation that hints at its depth and richness. On the nose, it unfolds an aromatic complexity that combines notes of dark fruits such as blackberry and black cherry, with dark floral nuances, anise, and wild herbs, creating an olfactory symphony that captivates the senses. On the palate, the wine is structured and robust, with firm tannins that promise a long life and a favorable evolution in bottle. Its well-balanced acidity brings freshness and harmony, while the long, persistent finish leaves a lasting impression of its quality and character.
This wine is ideal for pairing with roast or stewed red meat dishes, game, and aged cheeses, enhancing the dining experience with its presence and complexity. It is recommended to serve it at a temperature of 18°C to fully appreciate its organoleptic qualities. With an alcohol content of 13.5% vol., Il Caberlot «Podere Il Carnasciale» positions itself as a high-end choice for wine lovers seeking a unique and memorable sensory experience.
