This winemaking gem comes from the winery Il Colombaio di Santa Chiara, a family business which, since its founding in 2002, has blended tradition and innovation in the production of high-quality wines. Located on the hills of San Gimignano, the winery has approximately 22 hectares of vineyards, where the Logi family, guided by the passion of the patriarch Mario, has cultivated the land for generations. The winery’s philosophy focuses on organic viticulture, aiming to bring out the unique characteristics of the local terroir and produce wines that reflect the authenticity of the territory.
This wine is characterized by its straw-yellow color with greenish highlights, a visual expression of its freshness and vitality. On the nose, it offers aromatic complexity that combines notes of white-fleshed fruit, such as apple and melon, with delicate floral essences of jasmine and a mineral touch reminiscent of limestone. On the palate, it presents a vibrant acidity and a balanced structure, highlighting its mineral character and a persistent sensation of freshness that invites you to keep tasting. The winemaking of this wine includes whole-cluster skin maceration, followed by a gentle pressing of the whole grapes.
