Paralupi Appassimento Rosso di Puglia is a wine gem from the prestigious Varvaglione winery, located in the Puglia region of Italy. This crianza red wine is made using the appassimento technique, in which the grapes are left to dry on the vine for approximately 20 days, concentrating their sugars and flavors. This ancestral practice, although risky, gives the wine exceptional depth and complexity.

The varietal blend of this elixir includes Negroamaro, Primitivo and Malvasia Nera, three native varieties that add richness of nuances to the final product. After the harvest, the grapes undergo a brief pre-fermentative maceration at temperatures of 12-14°C, extracting the characteristic aromas of each variety. Subsequently, fermentation takes place over 20-25 days at controlled temperatures of 24-26°C, followed by malolactic fermentation.
